What exactly are Vidalia onions? We at American Heritage get this question quite often, since one of our most popular Stonewall Kitchen sauces is called Vidalia Onion Fig Sauce . Because I saw them in the supermarket today, I wanted to introduce them on our blog. The Vidalia onion is a mild, sweet onion about the size of an apple.
Its name, as indicated by the small "R," is protected. It has been cultivated in Georgia since 1930, where the mild winters necessary for this type of onion are found. Harvested from April to June, it is therefore only available in spring and summer. It is considered America's most popular onion, and if we had refrigerated containers for transport, I would have imported a few to Germany.
