Before you put aromatic smoking chips in the cast iron box, you first have to store them in liquid for a while (e.g. in the Wood Chip Soaker from Outset). When the wood chips are ready, pour off the water, put the chips in the Wood Chip Smoker and then on the grill. The wood chips then slowly smoke in the cast iron mold and release their smoky wood aroma through the round openings of the smoker - this gives your grilled food the typical barbecue taste .
